ストレスフリーなつみれ蕎麦

半島育ちだからだろうか。昔から魚のつみれだけは父が担当していた。新鮮な
魚が手に入った時のみ作っていたのだろう、臭みが一切ない上品な味だった。
ただ根がものぐさな父なので中骨の除去具合が甘く、やたらと喉に小骨が刺さる
エヘン虫のようなつみれでもあった。何とかならないものかと頼めば
「カルシウムだ」の一言で片付けられ、骨が刺されば米を丸呑みさせられる
のみだった。だから実家を出るまで魚のつみれというものは旨さと引き換えに
痛手を負う、肉を切らせて骨を斷つような食べ物だと思っていた。
それから大人になり家を出、外食で魚のつみれを食べる機会が何度かあった。
小骨が喉に当たらない安全なつみればかりだったが、魚の鮮度に不安があるもの
が大半だった。
そうして自然と自分でつみれをこしらえるようになる。近隣のスーパーの
魚でつみれを作るならたとえ刺身用でもイワシではなくアジの方が無難だという事も
徐々に判明してきた。
フライにするには小さく、南蛮漬けにするには大きすぎるような
微妙なサイズ感の鯵は、使い勝手が悪いからか安く売られている事が多い。
しかも刺身用であれば、つみれを作る一大チャンスだ。
鯵は三枚におろし、ピンセットで中骨を丁寧に抜き、皮を剥く。それから
出刃で叩いてペースト状にしてボウルにうつし、塩、ネギのみじん、味噌。
つなぎには卵か片栗粉を。湯を沸かし日本酒と塩を入れ、まるめたつくねを
入れていく。
これを一晩置けば、朝には味の染み出した美味しい汁ができている。実家では
吸い物だったが自分は野菜を足す事が多い。
今朝はこれに蕎麦を入れ、つみれ蕎麦に。臭みもなく骨が全く当たらない
ストレスフリーなつみれ蕎麦だ。珍しく店主（配偶者）からの「旨い」も引き出し
大変満足したのだが、つみれ自体は父の方が旨かったように思う。まさか骨が？
色々不明になったので、ひさしぶりに実家に電話でもかけてみるべく箸を置いた。

おかず過多弁当となる。これをつまみに一杯やりたいようなラインナップだが
会社なので茶で流し込むしかない。こういう場合ノンアルコールビールを・・と
頭をよぎるのだが何となくやめている。あのノンアルコールビールという飲み物。
ジャンルとしてはただのソフトドリンクであるのに何故会社で飲むのが
憚られるのだろうか。自分でも説明のしようがない不思議な感覚だ。

Rong has pursued sculpting since an early age. She studied art at the Academy of Fine Arts in Beijing, then under the tutelage of sculptor Wang Du, and later she “immersed herself” in figurative sculpture techniques used by European artists in the Renaissance and Baroque periods. Their sense of femininity plays a defining role in Rong’s contemporary works, and the stylistic guidelines help carry on the tradition of realistic sculptures in art.
132 black cats lined up to audition for the title character in Edgar Allen Poe’s 1843 short story The Black Cat in 1961. In the story, the cat’s owner plasters him into a wall, along with his murdered wife. Eventually, the animal’s mewing from beyond the grave leads investigators to the woman’s body. The film adaptation, which would appear in the 1962 horror compilation Tales of Terror, adjusted the storyline by weaving in elements of another Poe tale. “Sirs: After seeing the picture of Susie, the laughing kitten in LIFE (May 6 issue), I decided to name this kitten Susie-Q, an adventurous imp who almost drowned when she became too curious about a pot of milk.
